Chargrilled Oysters at Maria's

For chargrilled oysters in New Orleans, Maria's roasts fresh Gulf oysters in a house chili butter — Tabasco mash, lemon, and parmesan — at our oyster & wine bar in the Warehouse District. They come out bubbling and just-charred, and regulars tell us they beat the famous spots ("the best of 3 spots, and 2 were well known").

Ours bring the heat. Where the classic chargrilled oyster leans on mellow garlic and parmesan, our chili butter is built on a Tabasco mash — bright Louisiana fire under the char, finished with lemon and parmesan.

Our Chili Butter Roasted Oysters ($24) are the ones to order — Gulf oysters roasted with a Tabasco-mash chili butter, lemon, and parmesan. Not the standard garlic-and-cheese chargrilled; ours carry the heat and brightness Louisiana does best.

If you like them cold, the raw side is just as good. Wild Gulf Oysters ($13 / $25), plus rotating premium Gulf varieties on the half shell — Barataria Beauties (Grand Isle, LA), Murder Points (Murder Point, AL), and Brightsides (Grand Isle, LA) — and don't sleep on the homemade hot sauce. Going big? The Seafood Plateaux ($68) stacks wild and premium oysters with smoked tuna dip, snapper ceviche, and poached shrimp.
